Anyone, Lost Boy or no, who has spied a scurrilous band of pirates can identify them by their bristling weapons, stripey attire, and distinctive hats.
Savory and awesome, these tricorn meat pies are a perfect addition to any sound pirate party! The flexibility of the recipe allows for using your favorite variety of sausage, and results in a flaky, delicious snack for parties, movie nights, or just a bit of fun the rest of the time.
Tricorn Meat Pies Recipe
Prep: 20 minutes Baking: 20-30 minutes
Yield: 12 meat pies
- 3 large sausages of your choice
- 3 cups flour
- 1 stick butter (8 Tbs.)
- pinch of salt
- 1 egg
- water – enough to hold it together
- 1 beaten egg, for glaze
Cut each sausage into four equal pieces. Set aside. Preheat the oven to 350 F, and line a baking sheet with parchment paper.
Rub or cut the butter into the flour. Add the salt and the egg, then just enough water to make a cohesive dough. Roll out the dough about 1/4″ thick, and using two round cutters, cut into 24 discs: you should have 12 5″ rounds, and 12 3″ rounds.
Arrange all of the larger discs on your workspace. Place one piece of sausage on top of every dough disc, then place the smaller disc on top. Gently push the top dough down around the sausage- it probably won’t go all the way down to meet the bottom dough, but that’s fine.
Wet down the bottom disc with water, then carefully fold up the edges to form the tricorn shape, making three points, and pinching the dough together where needed. It may take several times to make the sticky dough bind to itself- be patient! Continue with all the dough and sausages.
When all the tricorns are made, carefully make an X shape on each side with a small knife to simulate stitches on the hat. Place the meat pies on the prepared baking sheet. Brush with the beaten egg and bake for 30 minutes, or until golden brown.
Allow to cool for several minutes before eating- the sausage will be hot!
